Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a bowl, combine the ground walnuts, sugar, and vanilla extract. Chop the dark chocolate into small pieces or grate it.
Place one sheet of strudel dough on your work surface and brush it with melted butter. Place the next sheet on top, and brush again with butter. Continue layering until all the sheets are stacked.
Sprinkle the center of the strudel sheets with the walnut mixture and the chopped chocolate. Drizzle with a little milk for a creamier filling.
Fold in the edges of the strudel sheets, and then roll up tightly like a roulade.
Place the strudel on the prepared baking sheet and brush the top with melted butter to ensure a beautiful golden-brown crust during baking.
Bake in the preheated oven for 20-25 minutes, or until the strudel is crispy and golden brown.
Let the strudel cool slightly before slicing. Dust with powdered sugar before serving.
