In another bowl, beat the eggs with the sugar until light and fluffy.
Add the melted butter, milk, vanilla extract, and lemon zest, then mix well to combine.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined and smooth.
Pour the batter into the prepared pan and spread evenly.
Bake for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
Serve dusted with powdered sugar or dip it in coffee for breakfast.
