Pour the apple cider, freshly squeezed lemon juice, and honey into a shaker. It's important that the honey dissolves completely in the liquid, so mix thoroughly before moving on to the next step.
Add the egg white to the shaker. This will create the foamy layer of the drink. Dry shake vigorously for 15-20 seconds (without ice) to properly whip the egg white.
Add 4 ice cubes to the shaker and shake for another 10-15 seconds to chill the drink and achieve the right consistency.
Strain the drink into a pre-chilled glass, making sure the foamy layer remains on top. For a silkier texture, you can use a fine-mesh strainer.
Sprinkle a pinch of cinnamon on top of the finished drink to make it even more flavorful and visually appealing.
