In a medium bowl, combine the tomatoes, red onion, garlic, chili pepper, and cilantro. Make sure everything is evenly distributed.
Squeeze in the lime juice, add the olive oil and salt. Mix thoroughly to blend the flavors.
Let the salsa sit in the refrigerator for at least 30 minutes to allow the flavors to meld. Stir once more before serving.
