Prepare all the ingredients. Peel and dice the apples into small cubes. Break the chocolate into smaller pieces.
Separate the eggs, placing the egg whites in a clean bowl. In another bowl, whisk together the egg yolks, sugar, vanilla sugar, and cinnamon.
Pour the milk and butter into a saucepan and heat over medium heat until the butter is melted. Do not let the mixture boil; just warm it through.
Place the chocolate in a small bowl and melt in a double boiler. Once melted, pour the chocolate into the egg yolk mixture and stir well to combine.
Beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture.
Sift the flour and gradually add it to the chocolate mixture, mixing well to combine.
Grease a soufflé dish with butter, then pour in the chocolate mixture. Distribute the diced apples evenly over the top of the batter.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé has risen nicely and is golden brown.
Once done, let it cool slightly before serving warm, and sprinkle a little cinnamon on top.
