In a large bowl, whisk together the flour, granulated sugar, vanilla sugar, and a pinch of salt.
Crack in the eggs and gradually add the milk while whisking continuously, until you have a smooth, lump-free batter.
Add one tablespoon of oil and mix well. Let the batter rest for 15 minutes.
Meanwhile, peel the apples and grate them using a large-holed grater. Mix the grated apple with the cinnamon.
Lightly grease a pancake pan with oil and heat over medium heat.
Pour a ladleful of batter into the pan, then evenly sprinkle with the cinnamon-apple mixture. Cook for 1-2 minutes, then flip and cook for another minute, or until golden brown.
Repeat the process until all the pancakes are made. Keep the cooked pancakes warm.
Before serving, sprinkle the pancakes with powdered sugar. You can also drizzle with honey or sprinkle with cinnamon sugar, if desired.
