Peel the apples, grate or slice them thinly, then mix with the sugar, cinnamon, vanilla sugar, and lemon juice. Let it sit for 10 minutes to release its juices.
Drain the apple juice to prevent the strudel from becoming soggy during baking.
Lay out the strudel dough sheets on a clean kitchen towel and brush each one with melted butter. Stack 2-3 sheets on top of each other for a more stable structure.
Sprinkle the center of the strudel dough with breadcrumbs, then evenly spread the prepared apple filling on top.
Using the kitchen towel, carefully roll up the strudel and place it on a baking sheet lined with parchment paper.
Brush the top of the strudel with beaten egg to give it a beautiful golden-brown color during baking.
Bake in a preheated oven at 350°F (180°C) for 30-35 minutes, until the strudel is golden brown and crispy.
Let it cool slightly, then sprinkle with powdered sugar to taste and serve.
