In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
Cut the butter into small cubes, then rub it into the dry ingredients until the mixture resembles coarse crumbs.
Add the honey, granulated sugar, vanilla sugar, and eggs. Mix well until a smooth dough forms.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to make it easier to handle.
Divide the chilled dough into two equal parts. On a lightly floured surface, roll each piece into a circle about 3-4 mm thick.
Place one dough circle onto a baking sheet lined with parchment paper. Spread evenly with apricot jam and sprinkle with chopped walnuts, if using.
Carefully place the second dough circle over the jam layer. Gently prick the top with a fork to allow steam to escape during baking.
Bake in a preheated oven at 350°F (180°C) for about 25-30 minutes, or until golden brown.
Remove from the oven and let cool completely before dusting with powdered sugar and slicing to serve.
