Heat the milk over low heat, stirring frequently to prevent scorching. Avoid boiling; aim for a gentle simmer.
Once the milk reaches the desired temperature, remove from the heat and let it steep for 5 minutes to allow the cinnamon flavor to infuse.
Remove the cinnamon stick and add the honey. Stir well until the honey is completely dissolved.
Pour the milk into a mug and sprinkle a pinch of ground cinnamon on top.
