Simmer the cider over low heat for 10-15 minutes to allow the flavors to meld.
Remove from the heat, stir in the honey and vanilla extract, and mix well.
Strain the cider through a fine-mesh sieve to remove the spices and mint pieces.
Chill the cider, then pour into glasses with ice cubes.
Garnish with fresh mint leaves and a cinnamon stick, then serve immediately.
