Preheat your oven to 350°F (180°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, cinnamon, baking powder, and a pinch of salt.
In a separate bowl, whisk the eggs, then add the oil and milk. Whisk until smooth.
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix.
Fill the muffin liners about three-quarters full with batter.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
