250 g All-Purpose Flour
80 g Granulated Sugar
1 tsp Ground Cinnamon
1 packet Baking Powder
1 pinch Salt
150 g Unsalted Butter, softened
1 Egg
1 db Orange Zest
200 g Your Favorite Jam

    Prepare all the ingredients. Let the butter soften to room temperature for easier handling. Zest the orange using a fine grater, being careful to only zest the colored part and avoid the bitter white pith.

    In a large bowl, whisk together the flour, sugar, cinnamon, baking powder, and a pinch of salt. This will be your dry mixture.

    Add the softened butter to the dry mixture and begin mixing until you get a crumbly dough. If the dough seems too dry, you can add a tablespoon of cold water.

    Beat the egg, then add it to the dough and mix until just combined. Grate in the orange zest. Do not overmix the dough; it should remain soft and tender.

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This allows the dough to rest and makes it easier to shape.

    After the dough has chilled, roll it out on a lightly floured surface to about 5mm thickness. Use a small cookie cutter to cut out the linzer cookies. Cut out a small hole in the center of half of the formed cookies, so the jam filling will be visible.

    Bake the linzer cookies in a preheated oven at 350°F (180°C) for 8-10 minutes, or until golden brown. Be careful not to overbake, or they will become hard.

    Once the linzer cookies have cooled, spread jam on the solid cookies and top with the cookies that have the hole in the middle. You can dust the assembled linzer cookies with a little cinnamon on top for extra flavor and appeal.
