Wash the plums, halve them, and remove the pits. Peel and finely chop the red onion.
In a large saucepan, pour in the apple cider vinegar, then add the plums, chopped onion, brown sugar, ginger, cinnamon stick, salt, and pepper.
Stir all the ingredients together, then cook over low heat for 40-50 minutes, stirring occasionally, until the plums soften and the sauce thickens.
The chutney is ready when the plums have broken down and the chutney has a thick, jam-like consistency.
Once ready, remove from the heat and let it cool slightly. Transfer the finished chutney to clean jars and seal.
Serve with roast meats, cheeses, or simply with fresh bread.
