In a bowl, combine the plums with the sugar, vanilla sugar, and cinnamon. Let it sit for a few minutes to allow the flavors to meld.
On a lightly floured surface, unfold the puff pastry and roll it out thinly.
Sprinkle breadcrumbs over the center of the pastry to absorb the plum juices during baking. Evenly distribute the cinnamon plum filling over the center of the pastry.
Fold the edges of the pastry over the filling, then flip it over so the seam is underneath. Brush the top with beaten egg.
Preheat the oven to 350°F (180°C) and bake the strudel for 25-30 minutes, or until golden brown.
Let it cool slightly before slicing. Dust with powdered sugar and serve.
