Thoroughly rinse the jasmine rice in cold water until the water runs clear. This helps remove excess starch, ensuring the rice remains fluffy.
In a medium saucepan, bring the water to a boil with a pinch of salt, then add the cinnamon stick. Once boiling, add the rice, reduce heat to low, cover, and cook for 12-15 minutes.
While the rice is cooking, soak the raisins in lukewarm water for 5 minutes to soften them.
In a small skillet, melt the butter, then add the almonds and toast until golden brown, about 2-3 minutes.
When the rice is tender, remove the cinnamon stick, then stir in the honey and the previously drained raisins.
Sprinkle with the toasted almonds, then gently stir to distribute the flavors. Serve warm or at room temperature.
