Finely chop the tomatoes, grate the ginger, and crush the garlic.

Add the chopped tomatoes and stir well to combine.
Pour in the apple cider vinegar, then add the brown sugar, cinnamon stick, and chili flakes.
Simmer over low heat for 25-30 minutes, or until the chutney has thickened and the flavors have melded.
Remove the cinnamon stick and stir in the freshly squeezed lime juice.
Season with a pinch of salt and let cool completely for the flavors to fully develop.
