Preheat your oven to 350°F (180°C). Grease a 9-inch (22 cm) cake pan and lightly dust it with flour to prevent the cake from sticking.
In a large mixing bowl, whisk together the flour, ground walnuts, baking powder, and cinnamon. Make sure the dry ingredients are well combined to ensure the cake rises evenly.
In another bowl, cream together the softened butter, granulated sugar, and vanilla sugar until light and fluffy. Use a hand mixer or stand mixer for this step.
Add the eggs one at a time to the butter mixture, mixing well after each addition. This will help aerate the batter and achieve the right consistency.
Alternately add the dry ingredients and the milk to the egg and butter mixture, beginning and ending with the dry ingredients. Add a little dry ingredients, then a little milk, and repeat until everything is incorporated. This will prevent over-mixing the batter.
Pour the batter into the prepared cake pan and spread it evenly with a spatula to ensure even baking.
Bake the cake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean. Avoid opening the oven too early, as the cake may collapse.
Once baked, remove the cake from the oven and let it rest in the pan for 10 minutes. Then, invert it onto a wire rack to cool completely.
Dust the top with powdered sugar, then slice and serve. It pairs perfectly with a cup of hot tea or coffee.
