Finely chop or grind the walnuts to better release their flavor into the cider.
In a saucepan, heat the apple juice. Add the cinnamon stick, cloves, and a pinch of nutmeg.
Simmer over low heat for 5-7 minutes to allow the spices and walnuts to infuse the juice.
Remove from the heat, stir in the honey and vanilla extract. Let it cool for 10 minutes.
Strain the drink to remove the spices and walnut pieces, then pour it into a large pitcher.
Refrigerate for at least 30 minutes to chill the drink. Before serving, top it with sparkling mineral water.
Serve with ice cubes. Garnish with a sprinkle of ground walnuts or a cinnamon stick on the rim of the glass.
