Greek pita gyro with pork, tomatoes, onions, tzatziki and French fries served

Classic Greek Pita Gyro (Pork)

The origin of the gyro comes from the world of Greek street food, where juicy, seasoned meats are wrapped in pita bread and served with fresh vegetables and creamy tzatziki. It became popular in Athens in the mid-20th century and has since conquered fast food lovers all over the world. The classic version is made with pork, but chicken or beef versions are also common. The refreshing, yogurt-based character of tzatziki perfectly balances the flavor of the spicy, juicy meat. Imagine the smell of hot, seared meat mingling with the freshness of pita, as the tzatziki melts creamly inside. This recipe is the perfect choice if you want to quickly conjure up authentic Mediterranean flavors at home!

    Preparation Steps

    1

Slice the pork shoulder into thin strips. Place in a bowl, add the olive oil, crushed garlic, lemon juice, oregano, salt, and pepper. Mix well, cover, and refrigerate for at least 30 minutes. Tip: The longer it marinates, the more flavorful it will be.

    2

Heat a skillet over medium-high heat and cook the pork for 6-8 minutes, until nicely browned and cooked through. Tip: Don't overcrowd the pan, or the meat will steam instead of sear.

    3

Warm the pita bread in a dry skillet or oven for 1-2 minutes per side. Tip: Lightly moistening the edges of the pita will make it more pliable and easier to fill.

    4

Slice the tomatoes and thinly slice the red onion. Tip: You can soak the onion slices in cold water for 10 minutes beforehand to mellow their flavor.

    5

Assemble the gyros: place tzatziki on the center of a pita, top with cooked pork, tomato slices, onion rings, and French fries to taste. Tip: Classic Greek gyros always includes a few French fries.
