In a bowl, combine the dry yeast, sugar, and lukewarm water. Let it stand for 10 minutes until foamy.
In a large bowl, sift the all-purpose flour, then add the salt and olive oil.
Pour in the proofed yeast mixture and mix with a spatula until combined.
Knead by hand or with a stand mixer until you have a smooth dough, about 10 minutes. If it's sticky, add a little flour.
Place the dough in an oiled bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
Turn the risen dough out onto a floured surface and divide it into 8 equal portions.
Shape them into round buns and place them on a baking sheet lined with parchment paper.
Cover with a kitchen towel and let rise for another 30 minutes.
Brush the tops of the buns with plant-based milk and sprinkle with sesame seeds.
Preheat the oven to 375°F (190°C) and bake the buns for 15-18 minutes, or until golden brown.
Let them cool on a wire rack, then serve fresh or store in an airtight container.
