Grill the chicken breast in a pan or oven, then slice into thin strips.
Cook the bacon in a pan until crispy, then set aside on a paper towel to drain excess fat.
Slice the tomato, wash and dry the lettuce leaves.
In a large bowl, combine the flour, baking powder, salt, and pepper.
In another bowl, whisk the eggs, add the milk and melted butter, then mix well.
Pour the wet ingredients into the dry mixture and mix until you get a smooth batter.
Preheat the waffle iron and grease it with a little butter or oil to prevent sticking.
Pour a portion of the batter into the waffle iron and cook for 3-4 minutes, or until golden brown.
Let the finished waffles cool for a few minutes, then spread with a little mayonnaise and mustard.
Place a slice or two of tomato, the grilled chicken, the crispy bacon, and the fresh lettuce leaves on top.
Serve fresh, optionally with extra mayonnaise or other dressing.
