In a medium saucepan, combine the apple cider, honey, cinnamon stick, and cloves. Stir until the honey is completely dissolved.
Add the coconut milk to the saucepan and gently heat the mixture over medium heat. Tip: Avoid boiling, as the coconut milk may curdle.
Stir in 2 tablespoons of freshly squeezed lemon juice to brighten the flavors and add a touch of freshness.
Stir well and let the mixture steep for 5 minutes off the heat, allowing the flavors to meld.
Before serving, strain the cider to remove the cinnamon stick and cloves. Garnish with fresh mint and, if desired, sprinkle a little shredded coconut on top of each glass.
