Sauté: Heat the coconut oil in a medium saucepan over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant, about 2-3 minutes.
Combine Ingredients: Pour in the coconut milk, then stir in the soy sauce, brown sugar, and lime juice. Mix well to combine all the flavors.
Season and Simmer: Season with salt and pepper to taste. Reduce heat to low and simmer the sauce for 5-7 minutes, or until slightly thickened.
Refine (Optional): For a smoother sauce, use an immersion blender to puree the sauce. Then, simmer for another 1-2 minutes.
Serve: Serve the sauce warm with grilled fish, chicken, or vegetables. Garnish with fresh lime wedges and cilantro, if desired.
