Brew a shot of strong coffee and set aside, keeping it warm.
Warm the coconut milk and froth it using a handheld milk frother or steam wand until silky smooth.
Add the coconut cream and honey to the warm coconut milk and mix well to allow the flavors to meld.
Pour the coffee into a tall glass and layer the coconut milk on top. Spoon the milk foam over the top.
Garnish the latte with shredded coconut. Serve immediately with a straw or spoon.
