200 ml Water
100 g Granulated Sugar
2 tbsp Fresh Lime Juice
30 g Shredded Coconut
5 Mint Leaves (optional)

    In a medium saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. This should take about 5 minutes.

    Let the sugar syrup cool completely. Then, stir in the coconut milk, lime juice, and shredded coconut.

    Pour the mixture into a shallow dish and place it in the freezer.

    Every 30 minutes, scrape the sorbet with a fork to create a crystalline texture. Repeat this process 3-4 times until it's completely frozen.
