Rinse the rice thoroughly in cold water until the water runs clear. This helps remove excess starch, ensuring the rice remains fluffy.
In a medium saucepan, bring the coconut milk and water to a boil. Add the turmeric, salt, and sugar.
Once the liquid is boiling, add the rice and stir well.
Cover the saucepan and simmer over low heat for 12-15 minutes, or until the rice has absorbed the liquid and is tender.
Remove from heat and let the rice rest, covered, for an additional 5 minutes to allow the flavors to meld.
Stir in the butter or coconut oil, then sprinkle with toasted shredded coconut.
Before serving, garnish with fresh cilantro or parsley, if desired. Serve warm as a side dish or as a standalone dish.
