The scone is a classic element of English tea, which we have now prepared in a special coffee and oatmeal version. The ground coffee gives a deep aroma to the pastry, while the oatmeal provides extra fiber and nutrients. HINT: If you want a more intense coffee flavor, you can also add a little freshly brewed espresso to the dough. Do not overwork the dough, as the scone should remain crumbly! This coffee oatmeal scone is the perfect choice with a cup of morning coffee or as an afternoon snack.

50 g Rolled Oats
10 g Baking Powder
1 pinch Salt
10 g Ground Coffee
80 g Coconut Oil
120 ml Almond Milk
40 g Honey
1 Egg

    Preparation Steps

    Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

    In a large bowl, combine the whole wheat flour, rolled oats, baking powder, salt, and ground coffee.

    Cut the coconut oil into the flour mixture until it resembles coarse crumbs.

    In a separate bowl, whisk together the almond milk, honey, and egg.

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

    On a lightly floured surface, pat the dough to about ¾ inch (2 cm) thickness. Cut into triangles or rounds.

    Place the scones on the prepared baking sheet and bake for 15-18 minutes, or until golden brown.
