    Warm the water and milk until lukewarm. The liquid should be lukewarm so the yeast can proof properly. In a small bowl, dissolve the sugar and yeast in the lukewarm water, then let it rest for 5-10 minutes to proof.

    Sift the flour into a large bowl, add the salt, and mix. Pour in the yeast mixture, then add the butter. Knead the dough well until it becomes smooth and elastic. If necessary, add a little water to prevent it from being too dry.

    Let the dough rest in a warm place, covered, for 1 hour, or until it has doubled in volume.

    Once the dough has risen, turn it out onto a work surface and divide it into 8-10 equal pieces. Roll each piece into long cylinders, then shape them into pretzels.

    Place the pretzels on a baking sheet lined with parchment paper. Before putting them in the oven, brush them with a little water and sprinkle with sesame seeds.

    Bake the pretzels for 20-25 minutes, or until they are golden brown and fragrant.
