In a saucepan, slowly heat the cola over medium heat to allow most of the carbonation to evaporate. Let it simmer gently for about 5-7 minutes, then remove from heat and let it cool completely.
In a separate bowl, whisk together the heavy cream, sugar, vanilla extract, and lemon juice until the sugar is completely dissolved.
Pour the cooled cola into the cream mixture and mix thoroughly.
Refrigerate the mixture for at least 2 hours, or until well chilled.
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. If you don't have an ice cream maker, pour the mixture into a freezer-safe container and stir it with a fork every hour to prevent ice crystals from forming.
Place the ice cream in the freezer for at least 4 hours, or until completely frozen solid.
Before serving, let the ice cream stand at room temperature for a few minutes to soften slightly for easier scooping. Garnish with a slice of lemon or grated chocolate, if desired.
