In a medium saucepan, melt the sugar over medium heat until it turns into a golden brown caramel.
Add the butter and stir until completely melted and combined.
Pour in the milk and heavy cream, stirring constantly until the caramel is fully dissolved.
Add a pinch of salt and the vanilla extract, then let it cool slightly.
In a separate bowl, whisk the egg yolks, then gradually add a little of the warm caramel milk to temper the eggs.
Pour the tempered egg mixture back into the saucepan and cook over low heat, stirring constantly until thickened (about 5 minutes).
Let it cool completely, then pour the mixture into an ice cream maker and process according to the manufacturer's instructions until creamy.
If you don't have an ice cream maker, pour it into a shallow dish and place it in the freezer. Stir every 30 minutes to prevent ice crystals from forming.
Melt the dark chocolate over a double boiler, then stir in the coconut oil to create a smooth and fluid coating.
Thinly coat the inside of each waffle cone with the melted chocolate, then place in the refrigerator for a few minutes to set.
Fill the cones with the salted caramel ice cream and smooth the top.
Drizzle the top with caramel sauce, then sprinkle with toasted almond pieces.
Place the filled cones back in the freezer for another 30 minutes to allow everything to set properly.
Let them stand at room temperature for a few minutes before serving to allow the flavors to develop.
