Prepare the ingredients. Let the butter soften at room temperature for easier handling. Whisk the egg with the sugar and cinnamon.
In a bowl, combine the flour, baking powder, and a pinch of salt. This will be your dry mixture.
Add the whisked egg, softened butter, and cottage cheese to the dry mixture. Mix well until you have a smooth dough.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to rest.
Once the dough has rested, roll it out to a thickness of about 5 mm on a lightly floured surface. Use a cookie cutter to cut out linzer shapes. Cut out a small, medium-sized hole in half of the shaped linzer cookies to reveal the jam filling.
Bake the linzer cookies in a preheated oven at 350°F (180°C) for 8-10 minutes, or until golden brown.
After the linzer cookies have cooled, spread jam on the whole cookies, and then top them with the cookies with the holes. You can sprinkle a pinch of cinnamon on top of the assembled linzer cookies.
