In a large bowl, mix together the cottage cheese, eggs, sugar, vanilla sugar, sour cream, semolina, baking powder, and grated lemon zest. TIP: If the cottage cheese is lumpy, use an immersion blender for a smoother consistency.
Pour the mixture into the prepared cake tin and smooth the top with a spatula. TIP: A damp spatula helps to create a nice, even surface.
Bake the cake at 350°F (180°C) for 45-50 minutes, or until the top is golden brown. TIP: Check if it's done with a toothpick – if it comes out clean, the cake is ready.
Let the cake cool in the tin for 10-15 minutes, then remove it and place it on a wire rack to cool completely. TIP: It's easiest to slice when it's lukewarm.
