In a large bowl, combine the cottage cheese, eggs, granulated sugar, and vanilla extract.
Add the flour, baking powder, and a pinch of salt. Knead until you have a soft, non-sticky dough.
Heat the oil in a deep skillet or pot to 340-355°F (170-180°C).
Shape the dough into small balls and carefully drop them into the hot oil. Fry in batches to avoid cooling the oil down.
Fry the doughnuts for 2-3 minutes on each side, until golden brown.
Remove the doughnuts and place them on a paper towel-lined plate to drain excess oil.
Before serving, dust generously with powdered sugar. Serve with jam or chocolate sauce, if desired.
