In a bowl, combine the flour, baking powder, and powdered sugar.
Add the butter and cottage cheese, then knead until a smooth dough forms.
Wrap the dough and refrigerate for 30 minutes to rest.
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
Roll out the dough to a thickness of about 1/4 inch (0.5 cm). Cut out circles using a cookie cutter. Cut out the center of half of the circles with a smaller cutter.
Place the cookies on the baking sheet and bake for 10-12 minutes, or until golden brown.
Let the cookies cool completely. Spread apricot jam on the flat side of the whole cookies, then top with the cookies with the cut-out centers.
Dust with powdered sugar before serving.
