In a bowl, combine the rolled oats, baking powder, and a pinch of salt. This will be your dry mixture.
In a separate bowl, whisk the eggs, then add the cottage cheese, milk, honey, and vanilla extract. Mix until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing thoroughly until just combined.
Fill the muffin liners about three-quarters full to allow room for rising.
Bake the muffins for 20-25 minutes, or until golden brown. You can check for doneness by inserting a toothpick; it should come out clean.
Let the muffins cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
