Cut the cauliflower into florets, wash them thoroughly, then cook them in lightly salted water until tender-crisp. Drain well.
In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, until a light roux forms.
Pour in the heavy cream, whisking continuously to prevent lumps, and simmer until the sauce thickens.
Season with salt, pepper, and nutmeg. Gently fold in the cooked cauliflower, ensuring it's well coated with the sauce.
If desired, sprinkle grated cheese on top and bake in a preheated oven at 350°F (180°C) for a few minutes, or until the cheese is melted and lightly browned.
Serve hot as a side dish or a light main course.
