Peel and grate the ginger.
Heat the olive oil in a saucepan over medium heat. Add the grated garlic and sauté for 1-2 minutes, until fragrant.
Add the grated ginger and curry powder, and stir well to combine.
Pour in the heavy cream, season with salt and pepper to taste, and stir to incorporate.
Simmer over low heat for 5-7 minutes, or until the sauce has thickened slightly.
Stir in the lemon juice.
Serve the sauce over pasta, grilled meats, or vegetables.
