Crespells Mallorcan cookies served

Crespells

Crespells are traditional Mallorcan cookies, mainly prepared during the Easter season in the Balearic Islands of Spain. The recipe dates back hundreds of years and was originally baked in monasteries, then became a favorite festive cookie in families over the centuries. The sweet, crumbly cookie, flavored with lemon, orange, and cinnamon, is often cut into various shapes and then sprinkled with powdered sugar after baking. There's nothing better on a spring morning than the aroma of freshly baked Crespells filling the kitchen. The secret to perfect Crespells is dough of the right consistency and an even baking temperature, which ensures a crispy on the outside, crumbly inside texture.

    Preparation Steps

    1

In a large bowl, combine the flour, sugar, baking powder, and cinnamon.

    2

Add the grated lemon and orange zest to the mixture for enhanced flavor.

    3

Crack in the eggs, then pour in the milk and oil. Start bringing the dough together.

    4

Knead until you get a smooth, elastic dough. If it's too sticky, add a little flour.

    5

Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes.

    6

On a lightly floured surface, roll out the dough to about 5 mm thick, then cut out various shapes.

    7

Place the shapes on a baking sheet lined with parchment paper, leaving a little space between them.

    8

Bake in a preheated oven at 350°F (180°C) for about 15 minutes, or until golden brown.

    9

Let the cookies cool completely, then dust with powdered sugar before serving.
