In a large bowl, combine the all-purpose flour, semolina flour, sugar, vanilla sugar, and a pinch of salt.
Add the milk, egg yolks, and raisins. Mix until you have a smooth batter. Let it rest for 15 minutes.
Meanwhile, whisk the egg whites until stiff peaks form. Gently fold the whipped egg whites into the batter.
Melt the butter in a large skillet over medium heat. Pour the batter into the skillet and cook until the bottom is golden brown.
Using a wooden spoon, start to break up the batter into small pieces. Continue to cook, stirring occasionally, until all sides are golden brown and the mixture resembles coarse crumbs.
