Prepare the ingredients: let the butter soften at room temperature for easier handling. Also, prepare the curd cheese and egg for easier incorporation into the dough.
In a large bowl, whisk together the flour, sugar, baking powder, and a pinch of salt. This will be your dry mixture.
Work the butter into the dry mixture until it resembles coarse crumbs. Add the curd cheese and mix well to combine.
Whisk the egg and add it to the dough, mixing to incorporate. If necessary, add a little more flour to make the dough easier to handle.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to make it easier to work with.
Once the dough has chilled, roll it out to about 5 mm (approximately 1/4 inch) thick on a lightly floured surface. Use a cookie cutter to cut out the Linzer cookies. Cut out the middle of half of the cookies with a smaller cutter.
Bake the Linzer cookies in a preheated oven at 350°F (180°C) for 10-12 minutes, or until golden brown.
Melt the chocolate and spread it on the solid Linzer cookies. Top with the cookies that have a cut out in the middle, so the chocolate remains visible.
Once the chocolate has set, spread the tops of the Linzer cookies with jam for an even more delicious touch.
