Prepare the ingredients: peel and finely chop the red onion and garlic. Thoroughly rinse the cranberries.
In a medium saucepan, heat the olive oil over medium heat. Add the chopped red onion and sauté for 3-4 minutes, until translucent.
Add the minced garlic and curry powder, and cook for another minute until fragrant.
Pour in the beer, then add the brown sugar and apple cider vinegar. Stir until the sugar is dissolved.
Add the cranberries, salt, and pepper, and stir well to combine.
Bring the sauce to a simmer, then reduce the heat to low and cook for 15-20 minutes, until thickened and the flavors have melded.
Taste the sauce and adjust the seasoning as needed, adding more sugar for sweetness or apple cider vinegar for a more tangy flavor.
Let the sauce cool slightly, then blend until smooth using an immersion blender. Serve with grilled meats, roasted vegetables, or cheeses.
