Prepare the ingredients: peel and grate the ginger and garlic, juice the orange and lemon.
In a medium saucepan, heat the olive oil over medium heat. Add the grated ginger and garlic and sauté for 1-2 minutes, or until fragrant.
Add the curry powder and toast for another minute to release its aromas.
Pour in the freshly squeezed orange juice and lemon juice, then add the honey. Stir well to dissolve the honey.
Season with salt and pepper, then bring the sauce to a simmer. Once simmering, reduce the heat to low and cook for 10-15 minutes, or until slightly thickened.
Taste the sauce and adjust the seasoning as needed, adding more honey for sweetness or lemon juice for tanginess.
For a smoother consistency, blend the sauce with an immersion blender. Serve with fish, chicken, or grilled vegetables.
