Peel, pit, and dice the mango. Peel and grate the ginger and garlic. Finely chop the red onion.
Heat the olive oil in a medium saucepan over medium heat. Add the chopped red onion and sauté for 2-3 minutes, until translucent.
Add the grated garlic and ginger, and sauté for another 1-2 minutes, until fragrant.
Sprinkle with curry powder and stir well to release the flavors of the spices.
Add the diced mango and coconut milk. Simmer for 5-7 minutes, or until the mango softens.
Stir in the honey and lime juice, then season with salt and pepper to taste.
Remove from heat and blend with an immersion blender until smooth and silky. Serve with grilled meats, fish, or roasted vegetables.
