Finely chop the onion, and grate the garlic.
Heat the olive oil in a medium saucepan over medium heat. Sauté the onion for 2-3 minutes, or until translucent.
Add the garlic and sauté for another 30 seconds, until fragrant.
Stir in the brown sugar, mustard, and apple cider vinegar. Cook for 2-3 minutes, until the sugar is completely dissolved.
Add the tomato paste, Worcestershire sauce, smoked paprika, curry powder, and chili flakes.
Pour in the water, stir well, and let it simmer over medium heat for 10-15 minutes, until the sauce has thickened.
Taste and adjust seasoning with salt, pepper, or extra honey as needed.
Let it cool slightly, then transfer to a jar and serve with grilled meats, vegetables, or alongside burgers.
