Peel and finely chop the red onion and garlic. Finely chop the chili pepper as well.
Heat the olive oil in a medium saucepan over medium heat.
Add the chopped onion and sauté for 2-3 minutes, until translucent.
Add the garlic and chili pepper, and sauté for another minute.
Add the tomato paste, brown sugar, Worcestershire sauce, Dijon mustard, and apple cider vinegar, then mix well.
Stir in the smoked paprika, curry powder, salt, and black pepper, then simmer over low heat for 10 minutes.
Pour in the tequila and cook for another 5 minutes, allowing the alcohol to evaporate and the flavors to meld.
Let it cool slightly, then blend until smooth, or leave it chunky if you prefer a rustic texture.
Serve with grilled meats, roasted vegetables, or barbecue dishes.
