In a small saucepan, melt the butter over medium heat.
Add the grated garlic and sauté for 30 seconds, or until fragrant.
Pour in the white wine and cook for 2-3 minutes, allowing the alcohol to evaporate.
Add the freshly squeezed lime juice, lime zest, and honey (or maple syrup). Stir to combine.
Pour in the heavy cream and cook, stirring constantly, for 3-4 minutes, or until slightly thickened.
Add the chopped dill, salt, and white pepper. Stir well.
Cook for another 1-2 minutes, then remove from heat and let cool slightly.
Stir before serving and serve warm with fish, grilled vegetables, or seafood.
