Peel and dice the potatoes, then boil them in salted water until tender.
Drain the potatoes, reserving a little of the cooking water. Mash the potatoes and add the flour.
Mix until the dough pulls away from the sides of the pot. If needed, add some of the reserved cooking water.
Finely chop the onions and sauté them in oil until golden brown.
Using a spoon, form dumplings from the potato mixture and fry them in the onion-infused oil until golden brown on both sides.
Serve with sour cream and fried onions.
