Döner kebab served in pita bread with fresh vegetables, fries, and yogurt sauce

Döner Kebab

Döner kebab is one of Turkey's most famous dishes, which has spread all over the world. Its origins date back to the mid-19th century, when the first rotating spit roasters appeared on the streets of Istanbul. The thinly sliced, seasoned meat, roasted until crispy and served with fresh vegetables and yogurt, quickly became popular. The specialty of döner kebab is the even cooking during rotation and the resulting texture. The homemade version can also be prepared in a pan or on a grill if you use pre-seasoned and thinly sliced meat. Tip: If you want a more authentic experience, use homemade pita bread and homemade yogurt sauce. This dish is ideal for a weekend dinner, a gathering of friends, or as a quick lunch.

    Preparation Steps

    1

Cook the thinly sliced, pre-seasoned meat in a grill pan or on a griddle over high heat for 5-6 minutes, until crispy. Tip: Avoid overcrowding the pan, or the meat will steam instead of brown.

    2

Warm the pita or flatbread. Tip: Wrapping them in a slightly damp kitchen towel until serving will keep them soft.

    3

Clean the lettuce, and thinly slice the tomatoes, cucumber, and red onion. Tip: Prepare the vegetables just before serving to keep them fresh.

    4

Mix the yogurt with crushed garlic, salt, and a pinch of pepper. Refrigerate until serving.

    5

Cut the potatoes into fries and fry in oil or bake in the oven until golden brown. Tip: Soaking the potatoes and drying them thoroughly beforehand will make them crispier.

    6

Assembly: load the warm pita with the cooked meat, vegetables, and drizzle with the garlic yogurt sauce. Serve with the fries and extra sauce in a separate small bowl.
