Drain the dumplings, rinse them briefly with cold water, and set aside.
Heat the oil in a skillet. Add the remaining whisked eggs and pour the cooked dumplings over them.
Cook until the egg mixture is set but still slightly soft.
Garnish with fresh parsley and serve hot.
