Finely chop the onion, garlic, and fresh ginger.
In a medium saucepan, heat the olive oil over medium heat. Sauté the onion, garlic, and ginger until fragrant.
Add the berbere spice blend and stir well, allowing the spices to bloom in the oil for a minute.
Stir in the tomato paste and cook over medium heat for 5 minutes, allowing the flavors to meld.
Add water, salt, and pepper. Bring the sauce to a simmer and cook over low heat for 10-15 minutes, or until thickened to your liking.
Serve with grilled meats, vegetables, or flatbread. The flavors are intense and spicy, making it an ideal accompaniment to an Ethiopian-inspired meal.
